The more crowded the galaxy is, the better the AI seems to fare, I find. Commodore difficulty, or Captain if I'm playing a wonky/gimmicky empire. Medium elliptic galaxy, 1/2 marauder empires, no less than 12 AIs with at least 2 advanced, 2/3 fallen empires, aggressive AI, all else normal. I'm waaay far from being a hardcore player, I mostly do what I find interesting/thematic and do not minmax unless I need to, so there. I find the resulting experience to be mostly pleasant, mileage may vary of course. I play on Captain/Commodore since I dislike the restrictiveness of early game strategies when I play higher than that, crisis strength usually set to 1, higher if I want the ending result to be in doubt. The "AI falls flat on its face in slow motion after early game" thing can't really be helped in my experience (I pray to the Worm they do a SERIOUS review of the AI, it's in a sad state and I'm not even a good player!), but setting mid-game to 2250 and end-game to 2300 for me does wonders in terms of keeping the challenges coming and avoiding most of the boring late-game repeatable techs.
